Joshua Pinsky is the chef-partner behind Claud and Penny in New York City’s East Village. After graduating from the Culinary Institute of America, Joshua began working at a range of restaurants in San Francisco including Lafitte under the tutelage of Russell Jackson. In 2012, he moved to New York, starting as a cook at Momofuku Ko before eventually rising up the ranks to chef de cuisine. Joshua continued growing with the company, becoming the corporate chef of Momofuku and guiding the brand through a revolutionary time of expansion and development. In 2022, Joshua and partner Chase Sinzer opened Claud, their downtown bistro. In 2024, they debuted Penny, their raw bar and seafood counter directly upstairs. Both restaurants have received 3-star reviews from The New York Times, are included in The Michelin Guide and earned coveted spots on national lists including Esquire's Best New Restaurants and Wine Enthusiast Forward 50. The duo recently opened Stars, a 12-seat wine bar two blocks north of Claud and Penny.
