Domaine Ballot-Millot & Fils
Attending Winemaker, Charles BALLOT

Domaine Ballot-Millot has steeply improved in quality for the past decade. Although there are several red appellations in the Domaine’s portfolio, the emphasis remains on the white wines. In style they typify balance, poise and minerality, avoiding the heaviness of lesser Meursaults. Dedicated work in the vineyards helps the wines express their terroir, and strict pruning (rather than green harvesting) ensures low yields, resulting in well concentrated wines. New oak is used sparingly and work in the cellars is unmanipulative, allowing the intricacies of the wines to blossom.

(This is emphasized on the Domaine’s labels, which feature a drawing etched into a rock in the village dating from that year). The Domaine’s white cuvées have long figured among Burgundy’s most elite, possessing an understated elegance. François Carillon has been making wine since 1988 alongside his father and brother, and began producing wines from his own 6.5 hectare Domaine in 2010. He now produces Grand Cru Chevalier-Montrachet along with his premier cru and village level holdings in Puligny-Montrachet Enseignères, Les Perrières, Les Folatières, Les Champs Gain and Les Combettes.

All of the Domaine’s vineyards are cultivated biodynamically. Véronique Drouhin’s inaugural winemaking vintage was in 1988. Her passion is to make wines that are elegant, refined and complex. The philosophy of the Maison Joseph Drouhin can be resumed in five points: dedication to the diversity of Burgundy, family heritage, their total awareness of nature, the ideal of perfection and elegance, and the desire to share its great wines with the world.

Domaine Faiveley
Attending Winemakers Bernard HERVET
 and Erwan FAIVELEY

Since the Domaine’s foundation in 1825, the Faiveley family has dedicated the major part of their resources to buying vineyards situated on the best slopes in Burgundy. Today Faiveley owns approximately 120 hectares in, among others, the following appellations – Chambertin Clos de Bèze, Musigny, Clos de Vougeot, Echezeaux, Corton, Gevrey-Chambertin, Nuits-Saint-Georges and Mercurey). The Domaine believes in strictly limited yields and carefully controlled production. These meticulous methods allow for wines that mature well. The wines’ complexity and longevity are ensured by the high average age of the Domaine’s vines. These wines are outstandingly clean, rich, balanced and concentrated.

Domaine William Fèvre
Attending Winemaker Didier SEGUIER

Founded in 1959, this Domaine is at the forefront of Chablis production in Burgundy. It is comprised of 47 hectares within the following appellations: Saint-Bris, Petit Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru (of which they produce seven - Les Clos, Les Preuses, Vaudésir, Valmur, Bougros, Grenouilles and Blanchot). The unique mineral character of these Chablis comes from a soil that mixes marl and clay-rich lime, as well as a Kimmeridgian subsoil rich in minerals and oyster fossils. Since the 1998 vintage, the proportion of new casks was reduced so as to not dampen the subtle variations of Chablis terroir. These methods have allowed the Domaine to produce wines faithful to their origins with high aromatic purity, and whose principle characteristics are minerality and freshness.

Domaine Jean-Philippe Fichet
Attending Winemaker Jean-Philippe FICHET

Jean-Philippe Fichet strives to capture Meursault’s terroirs in their purest forms. He moved onto larger premises in 2001 and finished renovations there in 2005, with 8 hectares owned or en métayage. Holdings include parcels in Puligny-Montrachet 1er Cru Les Referts, Meursault Les Chaumes de Narvaux, Les Chevalières and Les Tessons. Most cuvées experience a relatively long eighteen-month élévage. He eschews aggressive stirring of the lees and all but the top cuvées do not see more than 20% new oak. Jean-Philippe is part of the new generation of Burgundians emphasizing the individuality of each terroir.

Domaine Fourrier
Attending Winemaker Jean-Marie FOURRIER

Domaine Fourrier (previously known as Pernot-Fourrier) has a long history in Gevrey-Chambertin extending over four generations. One of the first Domaines to export its wine to the United States, it is also one of the most well-endowed estates in the village with holdings throughout the most heralded appellations of the Cote de Nuits. Taking the reins in 1994, Jean-Marie burst onto the Burgundian scene by wisely combining the traditions of his father and uncle, his experience gained while working with Henri Jayer and the Domaine Drouhin in Oregon, and his own sense of style. Domaine Fourrier owns 9 hectares of vineyards in the communes of Gevrey-Chambertin, Morey-Saint-Denis and Chambolle-Musigny. Included among the holdings are important parts of "Clos St. Jacques" and "Combes Aux Moines" as well as a small but valuable slice of Griottes-Chambertin.

Maison Camille Giroud

This Domaine was founded in 1865 but only adopted its current name when Camille Giroud took up residence in the late 1890s. Known as one of the most exciting small negociants in Burgundy, Maison Camille Giroud has undergone a transformation in recent years. In 2001 the family company was acquired by a consortium of Americans, who, with the help of Becky Wasserman, recruited the talented David Croix as winemaker. His traditional approach emphasizes a minimum of new oak and late bottling. Appellations include Corton-Charlemagne, Gevrey-Chambertin, Latricières-Chambertin and Corton-Perrières.

Domaine Henri Gouges

Benjamin Leroux
Attending Winemaker, Benjamin LEROUX

Best known as the precocious young winemaker at Domaine du Clos des Epeneaux (Comte Armand,) Benjamin began making wines under his own name in 2007. He only works with the highest quality fruit from organically farmed or lutte raisonnée vineyards, but his end goal is to own his own estate. Benjamin enjoys working with little-known or under-appreciated terroirs. The Domaine’s flagship wine is Auxey-Duresses blanc. “For me,” he declares, “the goal is not a bottle of fine wine or exultant tasting notes. What interests me, instead, is to create memories of good times, of shared joy and happiness… of what the French call bonhomie.”

Domaine Bonneau du Martray
Attending Winemaker Jean-Charles LE BAULT DE LA MORINIÈRE

A family property for nearly two centuries, the vineyards of Bonneau du Martray lie on the hillside of Corton at the heart of the Corton-Charlemagne appellation. The Domaine has the most important holdings in all of the appellation and consecrates its full energy in producing two very special Grand Crus: Corton-Charlemagne, their signature wine, and Corton, a red interpretation of their emblematic wine. These wines are meticulously made, from specially selected old vines that produce incredibly small yields to scrupulous attention in the cellar. These are wines that have a global following and a reputation of being featured on some of the greatest tables on the planet.

Domaine Méo-Camuzet
Attending Winemaker Jean-Nicolas MEO

This fabled Domaine was originally founded by Etienne Camuzet, a member of the French Parliament, in the early 1900s. Jean Méo followed in his great uncle’s tradition as a career politician and leased the Domaine to share-croppers, the most important of which was the great Henri Jayer. Upon Jayer’s retirement, Jean’s son Jean-Nicolas took over the winemaking, though Jayer continued as an advisor.  Today, Jean-Nicolas is fully in charge, producing wines of concentration, texture and complexity.

Domaine Louis Michel et Fils
Attending Winemaker Guillaume Gicqueau-Michel

The Michel Domaine was founded in 1850 and is currently sixth-generation family owned. The winery is situated in the heart of Chablis, with the 25 hectare vineyard spread over the first wine-producing slopes, discovered by Cistercian monks in the 11th Century. A top winery in the appellation, the wines can age remarkably well. Vinification takes place at low temperature, and there is no batonnage. No oak has been used for the past forty years. Appellations include Grand Crus in Les Clos, Grenouilles and Vaudésir.

deuxmontilleMaison Deux Montille Soeur et Frère
Attending Winemaker Alix DE MONTILLE

The Maison Deux Montille was founded in 2003 by Alix de Montille and her brother, Etienne. They currently work with 20 appellations in Pouilly Fuissé, the Côte Chalonnaise and Meursault, and they own two parcels of land in Chambolle-Musigny and Beaune Premier Cru Les Epenottes. The wines are made from grapes that come from both parcels of land as well as fruit bought from a handful of other esteemed producers that are willing to sell some of their crop. In the cellar each lot is vinified separately, meaning that they have more than 50 lots before the assemblage for bottling. This is interesting for Alix and Etienne as they are able to follow the wine during its ageing in barrel. Their vinification is very traditional – they use indigenous yeasts and do not chaptalize. Alix says that her references are her husband’s (wines Jean-Marc Roulot) as they are deeply respectful of their terroir, which, she maintains, is what makes each wine different. Alix and Etienne look to make wines that are sprightly, focused, lean and complex, as those are the kinds of wines they like to drink.

Domaine Bernard Moreau
Attending Winemaker Alexandre MOREAU

The Moreau family has been making wine in Chassagne since the turn of the 19th century.  Under the auspices of Marcel Moreau, the vineyard reached nearly 80% of its current holdings in the 1930’s and its reputation has only improved under the guidance of Bernard and Françoise Moreau who established the name Domaine Bernard Moreau in 1977.  Today the Domaine produces the following appellations on its 9.5 hectares: Chassagne-Montrachet Premier Cru blanc in Les Morgeots, Les Grandes-Ruchottes, Les Chenevottes, La Maltroie; Chassagne-Montrachet Premier Cru rouge in Les Morgeots; La Cardeuse (monopole); Saint-Aubain Premier Cru blanc En Remilly; village Chassagne-Montrachet (rouge et blanc).  With a hands-off approach to vinification, Bernard allows his Pinot Noir and Chardonnay to speak for themselves, creating a rich but pure sensuality.

Domaine Ponsot
Attending Winemaker Laurent PONSOT

Known as one of the most extraordinary Domaines in Burgundy, vigneron Laurent Ponsot takes a unique approach to winemaking. He espouses picking late, retaining up to 25% of the stems, fermenting at high temperatures (but not cold-soaking) using new oak, using minimal sulphuring, not racking and bottling late. In addition, his white Monts Luisants is singular in that it is 100% very old vine Aligoté. The Domaine is also said to be the first site of clonal selection. Holdings include Clos de la Roche; Chapelle Chambertin; Griotte-Chambertin; Morey-Saint-Denis Premier Cru Les Monts-Luisants (red and white); Chambolle-Musigny Premier Cru Les Charmes and village Gevrey-Chambertin “Cuvée de l’Abeille.”

Holdings include Corton, Clos du Roi; Corton, Bressandes; Volnay Premier Cru in Clos de la Bousse d’Or (monopole), Les Caillerets-Clos des 60 Ouvrées (monopole) and Les Caillerest, Clos de L’Audignac (monopole). Domaine de la Romanée-Conti
Attending the Legends Dinner, Aubert DE VILLAINE
Simply put, Domaine de la Romanée-Conti produces the most sought-after wine in Burgundy. They are the largest producer in terms of Grand Cru ownership, and certainly one of the most famous. Today the estate is jointly owned by the De Villaine and Leroy families, and administered by the Burgundian icon Aubert de Villaine. The vineyards are strictly organic and the Domaine also practices certain elements of biodynamism. Regarding the role of the winemaker Aubert de Villaine says: “I believe that in Burgundy, the talent – the talent which produces the great wine – is in the terroir. The reputation of the wine from Burgundy was made over the past several centuries and it comes from the quality of wine that the particular terroir can provide. That is the talent. The role of the winemaker is to enable the terroir to be in the best condition possible – to help bring forward the product of the exceptional land. The role is to listen to the terroir…to understand what to do to achieve and equilibrium in the soil.”

Domaine Roulot
Attending Winemaker, Jean-Marc ROULOT

For more than 170 years Domaine Roulot has been an important presence in Meursault. But it was only in the 1920's and 30's that the family, led by Paul Roulot, became grape growers as well as winemakers and distillers. The Domaine as we currently know it was founded by Guy Roulot in the late 1950’s and is now run by his son and daughter. The Domaine is comprised of about 11 hectares in the communes of Meursault, Monthélie and Auxey-Duresses and produces the following appellations among others: Meursault Les Tessons, Clos de Mon Plaisir and Les Tillets; Meursault Premier Cru Les Bouchères, Les Charmes, Perrières and Poruzots; Monthèlie Premier Cru Les Champs Fulliot and Auxey-Duresses rouge. The wines are exceptionally terroir-expressive, pure and elegant.

Domaine Marc Roy
Attending Winemaker, Alexandrine ROY
This small family estate, started by Marc’s grandfather with only a few blocks of vines, now comprises four hectares.  The estate offers three distinctive cuvées of Gevrey-Chambertin, as well as Marsannay “Les Champs Perdrix.”   In 2003, his daughter Alexandrine took over as winemaker at the estate. Limiting yields and incorporating modern tools into their age-old cultivating practices, Domaine Marc Roy seeks to attain the ideal purity and concentration of fruit, worthy of its terroir. Alexandrine affirms that, “My commitment is to produce classic and elegant Pinot Noir, naturally-balanced by respecting the nobility of the Terroir, the typicity of the grapes, and the individual character of each vintage.”
