Discovery Lunch
The “cool” side of Burgundy!
with Didier Fornerol, Athénaïs de Béru, Clothilde Lafarge, Romain Derey, and David Duband

Boulud Sud (cuisine from Bar Boulud) - 20 West 64th Street, New York, NY 10023
11:45am Champagne Delamotte reception- Thur. 3/2
$375 +tax

Burgundy is a relatively small winemaking region, and the most coveted wines are rarer still. But while the Grands Crus and blue chip Premiers Crus are often the star of the show, the Burgundians put just as much care and attention into their more accessible appellations, with delicious results. This lunch will showcase this category of wines from five domaines. We will begin with the white wines of Didier Fornerol of Corgoloin, the southernmost village in the Côte de Nuits. Athénaïs de Béru, an innovator of biodynamics in Chablis, will then present three vintages of the Premier Cru Vaucoupin, whose steep slopes need to be worked by horse or by hand. Clothilde Lafarge & Maxime-Henri Lafarge will next pour three Passetoutgrains, the delicious co-planted blend of Pinot Noir and Gamay, including the two vintages of the family’s extremely rare and special old-vine cuvée “Anthologie,” created as an homage to the late Michel Lafarge and made exclusively from vines that were planted in the year of Michel’s birth (1928). Romain Derey will then feature three varied terroirs from the cool northernmost part of the Côte de Nuits. We will finish with three vintages made by the highly respected winemaker David Duband from the high-elevation Hautes Côtes de Nuits. The wines will be paired with the refined and soulful French cuisine of Chef Daniel Boulud at his Lincoln Square mainstay Boulud Sud (a Burgundian menu from the kitchen of Bar Boulud).

We have deemed dinners at La Paulée “once in a lifetime experiences” before but this dinner with Jean-Marc Roulot and Chefs Michel & Léo Troisgros will truly be irreplicable. Jean-Marc has generously opened his cellar to provide a mindblowing array of wines. We will begin with a seated tasting of five wines from the 2018 vintage, followed by a series of 2011’s in magnum. Following a flight of jeroboams of the domaine’s signature Meursault lieu-dit “Tesson,” we will finish with an astonishing vertical of Perrières back to 1976, all from large format. As a coda, the dinner will conclude with a tasting of Jean-Marc’s new line of eaux-de-vies de marc “L’Esprit des Lieux,” a parcel selection of marc distillations from the same terroirs tasted at the beginning of dinner. This will be the first time these eaux-de-vies have been tasted in the US.

If that didn’t sound special enough, Michel Troisgros, Marie-Pierre Troisgros, and their son Léo Troisgros are coming from their three-Michelin-starred restaurant Maison Troisgros in Ouches, France to cook this dinner, generously hosted by Chef Ryan Hardy at Legacy Records. All savory courses will be prepared by the Troisgros family, making this an incredibly rare chance to have the legendary “Troisgros” experience in the heart of New York City. We are honored to draw upon years of friendship with Jean-Marc and Michel to create this memorable evening!
