Why do you love Burgundy?

I love the transparency of the Pinot Noir grape being expressed by makers who have learned their craft over generations of winemaking.

I love Chardonnay when it's stuffed with rocks and made to shriek a little---like Puligny-Montrachet, or stuffed with rocks and the bass is turned up like Corton-Charlemagne. Classics are classics for a reason.

What is your favorite Burgundy Pairing?

Volnay with mushroom risotto. I could eat this every day.
Beaujolais with charcuterie
Roasted chicken with herbs and cream sauce with Corton blanc.

How are you celebrating La Paulée Burgundy Week?

We are excited to delve into our large Burgundy collection to feature some of our favorites, such as Corton Charlamagne, by the glass with the use of our coravin. We intend to explore these great wines, that we would normally offer exclusively by the bottle, and to pour them alongside daily Burgundy inspired specials created by Chef Raoul Whitaker.

We offer a strong selection of French burgundies and bordeaux as the backbone of our list. Then we branch out into US and Italy and Spain with touches from other world regions. We also offer a fairly large wine by the glass selection (30 options).
