7) Dinner with Collector Wilf Jaeger at Daniel Boulud’s DB Bistro Moderne in New York City
Wilf Jaeger, yet another exceptionally generous wine collector, is opening up his renowned cellar to offer unique pairings for a feast cooked by Chef Laurent Kalkotour at Daniel Boulud’s DB Bistro Moderne. The tasting will feature a vertical of Domaine Dujac’s Romanée St. Vivant. This small parcel owned by Wilf Jaeger produces two barrels yearly and was first made in 2005. It is farmed and made by Jeremy and Diana Seysses. This will be an opportunity to taste wines that are not generally available and will include the 2006, 2007, 2008 and 2009 vintages. Wilf will also provide the 2006, 2007, 2008, and 2009 of his St. Aubin Remilly Cuvée Nicholas Mattisse, another plot that he owns in the heart of the excellent Remilly vineyard. These vines are located nearly adjacent to Chevalier Montrachet with vine ages averaging sixty years. This wine is not commercially available.

Eddie has one of the best cellars in the country and in his own words, “the higher the bid, the better the wines”, including but not limited to Dom Perignon Oenothèque 1975, Domaine de la Romanée-Conti Montrachet 2004, Domaine de la Romanée-Conti La Tâche 1991, Chateau Latour 1982 and Chateau d’Yquem 1967.
